Gondak Cellars strives to produce elegant wines that highlight the unique features of the vineyards involved. According to Will, it's all about the vineyard. "The potential quality of a wine is created in the vineyard. It is the winemaker's task to guide the expression of that quality and to shape the style of wine. This might technically be a one-person show but there are too many influences, teachers, and experiences to list that all come into play. It's a collective effort."
Will Gondak has been chasing the dream. Experiences making wine in Napa, Sonoma, Australia, New Zealand, France, Santa Cruz, and South Africa have broadened his view into what is possible. The wide array of hands-on experience accompanied by the study of winemaking and viticulture at both Cal Poly, San Luis Obispo and Napa Valley College has yielded one curious wine nerd. Will has been calling Sonoma County home for since 2015 and is looking forward to his 15th harvest in 2022.
A full-time side hustle, Gondak Cellars was established in 2015. Will spends the majority of his work time helping make wines for several other brands while slowly building Gondak Cellars. Gondak Cellars will always remain a small brand, focused on high quality, small production wines.

This little gem of a vineyard sits on a south facing slope of the Franz Valley in the south western Knights Valley AVA of Sonoma County. Well-drained soils coupled with the surprisingly cool microclimate of the Franz Valley make this an ideal location to grow both Syrah and Viognier. This well positioned, terraced vineyard sits on an east facing hillside in the Northern reaches of the Russian River Valley AVA. The combined cool climate, eastern exposure, and well drained soils of the site lend to a beautiful expression of Grenache. Nerd Notes: Campbell Mckinney Vineyard Year planted: 1993. Elevation: 100 ft. Aspect: Southwest. Slope: 5-30%. Soil: Josephine Loam / Arbuckle Loam Complex (Well drained gravelly loam). colluvium and residuum weathered from altered sedimentary and extrusive igneous and metamorphic rocks. Growing season average temperature: High - 80.1 °F, Low - 48.0 °F. Culitvars: Grenache mystery clone. Memories do not always serve us well. Several differing stories of origin have been told, none are worth taking seriously.
Catie’s Corner Vineyard is a prime location for white Rhone varietals. The vineyard was originally planted in the sandy loam, benchland of the Russian River Valley in the late 1990’s and later budded over to Grenache Blanc. The relatively cool climate of this region is ideal for bringing Rhone varietals to full ripeness while preserving a satisfying level of acidity. Certified Sustainable and Fish Friendly Farming.
At the furthest reaches of the Russian River watershed, Graziano Vineyard sits in the high-elevation Potter Valley. The elevation of this valley causes frequent hot daytime weather conditions to plunge over night. The resulting relatively cool continental climate of the valley is very suitable to the ripening of the rare Italian white, Arneis.
